~ Tortilla Pizza ~

...the raw ingredients (not shown: parmesan) ...those are 12" flour tortillas, btw...



...everything chopped, shredded, grated, and ready to go (except the sauce)...



...here we see the beginning of the creamy garlic sauce, which is nothing more than an Alfredo sauce. The butter goes in first, then the garlic, then the heavy cream, then the grated parmesan and a touch of salt and pepper...




...well, by golly, then you schmear the creamy garlic sauce on the tortilla, then mozzarella, then the goods, then a sprinkle of shredded cheddar ('cause I had some in the fridge)...



...then into a preheated 450 degree oven on the center rack for ten little minutes...




...don't forget the dusting of pecorino romano!...





...and it's gone in less time than it took to cook... But wait!!...





...there's another in the oven!!...




...people, I've had pizza from Maine to Albuquerque and this pizza rates with the best I've had.

Wood-fired, rotisserie chicken pizza with creamy garlic sauce, asperagus tips (fresh, local, in season), thinly sliced green onion and finely chopped red onion...

...Mama Mia!!!...
